Ingredients

  • 2 cups cooked chicken, shredded or diced

  • 12 oz pasta (penne, rotini, or your choice)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 2 cups shredded cheddar cheese (or cheddar-mozzarella blend)

  • 1 1/2 cups heavy cream (or milk for a lighter option)

  • 1 can (14.5 oz) diced tomatoes, drained (optional)

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • Fresh parsley or basil for garnish (optional)


Instructions

  • Cook Pasta: Boil salted water and cook pasta until al dente. Drain and set aside.

  • Cook Aromatics: Heat olive oil in a skillet over medium heat. Add onions and cook until soft (about 3-4 minutes). Add garlic and cook for another minute.

  • Add Chicken & Seasoning: Add cooked chicken, Italian seasoning, salt, and pepper. Stir and heat through.

  • Make It Creamy: Pour in heavy cream, bring to a simmer, then add shredded cheese gradually, stirring until melted and creamy. Add diced tomatoes if desired.

  • Combine & Serve: Add cooked pasta, toss well to coat, and adjust seasoning. Garnish with parsley or basil and serve hot.
