- 1 lb ground beef (or ground chicken/turkey for a lighter version)
- 1/2 cup diced onion (optional, but adds amazing flavor!)
- 1 1/2 cups shredded cheddar cheese (or your favorite cheese blend)
- 1/4 cup chopped pickles (optional, but SO good!)
- 1 can (16.3 oz) refrigerated biscuit dough (8 large biscuits)
- Salt and pepper, to taste
- Ketchup, mustard, or dipping sauces of your choice (for serving)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
- Cook the ground beef and onions in a skillet over medium heat until browned and cooked through (6-8 minutes). Drain excess grease, season with salt and pepper, and let cool slightly.
- Separate biscuit dough and flatten each biscuit into a 4-inch circle.
- Spoon about 2 tablespoons of the beef mixture onto the center of each biscuit. Add shredded cheese and chopped pickles if using.
- Fold the edges of the biscuit dough over the filling and pinch to seal. Place seam-side down on the prepared baking sheet.
- Bake for 12-15 minutes, or until golden brown.
- Let cool for 5 minutes before serving. Serve with ketchup, mustard, or your favorite dipping sauces.
Notes
- You can freeze unbaked biscuit bombs for up to 3 months. Bake from frozen, adding an extra 5-7 minutes of baking time.
- To reheat, use an oven at 350°F (175°C) for 10-12 minutes for best results.
- Customize the filling by adding crispy turkey bacon, jalapeños, or swapping the cheese for mozzarella.
