Description

These Cheeseburger Biscuit Bombs are the ultimate comfort snack, featuring juicy beef, gooey cheese, and tangy pickles wrapped in golden biscuit dough. Perfect for parties, game nights, or a fun family dinner!

  • 1 lb ground beef (or ground chicken/turkey for a lighter version)
  • 1/2 cup diced onion (optional, but adds amazing flavor!)
  • 1 1/2 cups shredded cheddar cheese (or your favorite cheese blend)
  • 1/4 cup chopped pickles (optional, but SO good!)
  • 1 can (16.3 oz) refrigerated biscuit dough (8 large biscuits)
  • Salt and pepper, to taste
  • Ketchup, mustard, or dipping sauces of your choice (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
  2. Cook the ground beef and onions in a skillet over medium heat until browned and cooked through (6-8 minutes). Drain excess grease, season with salt and pepper, and let cool slightly.
  3. Separate biscuit dough and flatten each biscuit into a 4-inch circle.
  4. Spoon about 2 tablespoons of the beef mixture onto the center of each biscuit. Add shredded cheese and chopped pickles if using.
  5. Fold the edges of the biscuit dough over the filling and pinch to seal. Place seam-side down on the prepared baking sheet.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Let cool for 5 minutes before serving. Serve with ketchup, mustard, or your favorite dipping sauces.

Notes

  • You can freeze unbaked biscuit bombs for up to 3 months. Bake from frozen, adding an extra 5-7 minutes of baking time.
  • To reheat, use an oven at 350°F (175°C) for 10-12 minutes for best results.
  • Customize the filling by adding crispy turkey bacon, jalapeños, or swapping the cheese for mozzarella.
