These rich and gooey carrot cake cheesecake swirl bars are the perfect blend of warm spices, fresh carrots, and tangy cream cheese. Easy to make, beautiful to serve, and irresistibly delicious.
Ingredients
For the Bars:

½ cup unsalted butter, melted

1 cup light brown sugar, packed

1 large egg
-
1 tbsp vanilla extract

1 cup all-purpose flour
-
1 tsp ground cinnamon

¼ tsp baking powder
-
¼ tsp salt
-
1 cup shredded carrots (freshly grated)
For the Cheesecake Swirl:

4 oz cream cheese, room temperature

¼ cup granulated sugar
-
1 large egg yolk
-
¾ tsp vanilla extract
Instructions

Preheat oven to 350°F (175°C). Line or grease an 8×8-inch baking pan.

In a bowl, mix melted butter and brown sugar until smooth. Add egg and vanilla; stir well.

In a separate bowl, combine flour, cinnamon, baking powder, and salt. Add to wet mixture.

Fold in grated carrots.

In another bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.

Spread half of the carrot batter in the pan. Drop spoonfuls of cheesecake mixture over it.

Add the remaining carrot batter and the rest of the cheesecake mixture. Swirl with a knife.

Bake for 35–40 minutes, until edges are golden and the center slightly jiggles.

Cool completely, slice, and enjoy.
Notes

Use freshly grated carrots for the best texture and moisture.

Bars must cool completely before slicing to preserve the swirl.
