Description

This rich and creamy broccoli cheese soup is packed with tender broccoli, sharp cheddar cheese, and a velvety smooth broth. Perfect for a cozy meal, this homemade version is even better than Panera’s!


Ingredients

  • 4 cups broccoli florets (chopped)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk (or half-and-half)
  • 2 cups chicken broth (or vegetable broth)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded carrots
  • ½ tsp paprika (optional)
  • Salt & pepper to taste

Instructions

  • Melt butter in a large pot over medium heat. Add onions and garlic, sauté until soft.
  • Stir in flour and cook for 1 minute, whisking constantly.
  • Slowly add milk and broth, stirring until smooth.
  • Add broccoli, carrots, salt, pepper, and paprika. Simmer for 15-20 minutes.
  • Blend slightly for a creamy texture, or leave chunky if preferred.
  • Stir in cheddar cheese until melted. Serve hot with bread.

Notes

  • For extra creaminess, add ½ cup heavy cream at the end.
  • Use fresh, hand-grated cheese for the best melt.
