This rich and creamy broccoli cheese soup is packed with tender broccoli, sharp cheddar cheese, and a velvety smooth broth. Perfect for a cozy meal, this homemade version is even better than Panera’s!

- 4 cups broccoli florets (chopped)
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk (or half-and-half)
- 2 cups chicken broth (or vegetable broth)
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded carrots
- ½ tsp paprika (optional)
- Salt & pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Add onions and garlic, sauté until soft.
- Stir in flour and cook for 1 minute, whisking constantly.
- Slowly add milk and broth, stirring until smooth.
- Add broccoli, carrots, salt, pepper, and paprika. Simmer for 15-20 minutes.
- Blend slightly for a creamy texture, or leave chunky if preferred.
- Stir in cheddar cheese until melted. Serve hot with bread.
Notes
- For extra creaminess, add ½ cup heavy cream at the end.
- Use fresh, hand-grated cheese for the best melt.
