  • 12 cooked breakfast sausage links
  • 1 ½ cups all-purpose flour
  • 2 tbsp granulated sugar
  • 4 tsp baking powder
  • ½ tsp sea salt
  • 1 ⅓ cups buttermilk
  • 1 large egg, beaten
  • 4 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, mix buttermilk, egg, melted butter, and vanilla.
  • Combine wet and dry ingredients, stirring until just mixed. Let sit for 5 minutes.
  • Heat a non-stick skillet over medium heat and lightly grease with butter.
  • Pour 3 tbsp of batter onto the pan, forming a small pancake.
  • Cook for 2-3 minutes until bubbles form, then flip and cook another 2-3 minutes.
  • Warm the sausages in a separate pan until fully heated.
  • Place a sausage in the center of a pancake and roll it up.
  • Serve warm with maple syrup, powdered sugar, or fresh fruit.
