Description
A light, refreshing summer salad made with juicy blueberries, sweet peaches, crunchy cucumbers, and creamy feta tossed in a lemon basil vinaigrette.
Ingredients

1 pint fresh blueberries

2 peaches, diced

2 Persian cucumbers, sliced

½ cup crumbled feta cheese
For the Lemon Basil Vinaigrette:

3 tbsp fresh lemon juice

1 tbsp Dijon mustard

1 tbsp honey (or maple syrup)

1 tbsp olive oil
-
1 tbsp finely chopped fresh basil

Kosher salt and black pepper to taste
Instructions

In a large bowl, combine blueberries, peaches, and cucumbers.

In a jar or small bowl, whisk lemon juice, mustard, honey, olive oil, basil, salt, and pepper until emulsified.

Pour vinaigrette over salad ingredients. Toss gently.

Add crumbled feta and toss lightly again.

Chill or serve immediately. Garnish with extra basil if desired.

Use firm, ripe peaches for best texture.

Vegan? Use maple syrup and omit feta or use plant-based alternative.
