Blueberry Peach Cucumber Salad with Lemon Basil Vinaigrette

Description

A light, refreshing summer salad made with juicy blueberries, sweet peaches, crunchy cucumbers, and creamy feta tossed in a lemon basil vinaigrette.


Ingredients

Scale
  • 1 pint fresh blueberries

  • 2 peaches, diced

  • 2 Persian cucumbers, sliced

  • ½ cup crumbled feta cheese

For the Lemon Basil Vinaigrette:

  • 3 tbsp fresh lemon juice

  • 1 tbsp Dijon mustard

  • 1 tbsp honey (or maple syrup)

  • 1 tbsp olive oil

  • 1 tbsp finely chopped fresh basil

  • Kosher salt and black pepper to taste


Instructions

  • In a large bowl, combine blueberries, peaches, and cucumbers.

  • In a jar or small bowl, whisk lemon juice, mustard, honey, olive oil, basil, salt, and pepper until emulsified.

  • Pour vinaigrette over salad ingredients. Toss gently.

  • Add crumbled feta and toss lightly again.

  • Chill or serve immediately. Garnish with extra basil if desired.

Notes

  • Use firm, ripe peaches for best texture.

  • Vegan? Use maple syrup and omit feta or use plant-based alternative.

  • Great for make-ahead: store components separately and mix before serving.
