- 2 cups cooked chicken, shredded or diced
- ½ cup cherry tomatoes, halved
- ½ cup chopped lettuce or spinach
- ⅓ cup shredded cheddar cheese
- 3 strips crispy bacon, crumbled
- 1 avocado, diced (optional)
- 2 tbsp chopped green onions
For the Dressing:
- ½ cup mayonnaise (or Greek yogurt)
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- ½ tsp garlic powder
- Salt & black pepper to taste
Instructions
- Prepare the chicken by shredding or dicing it into bite-sized pieces.
- Cook the bacon until crispy, then crumble into small pieces.
- Chop the cherry tomatoes, lettuce, green onions, and avocado (if using).
- In a small bowl, whisk together mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, garlic powder, salt, and pepper.
- In a large bowl, combine the chicken, tomatoes, lettuce, cheese, bacon, avocado, and green onions.
- Pour the dressing over the salad and mix well.
- Serve immediately or refrigerate for later.
