Ingredients

15 oz black beans, drained and rinsed

2 cups whole kernel corn (frozen or canned; thawed if frozen)

1 large tomato, diced

1 small onion, diced

2 tablespoons lime juice (freshly squeezed)

Fresh cilantro (optional, to taste)

Salt and pepper, to taste
Instructions

If using frozen corn, thaw it and drain completely.

Rinse and drain the black beans thoroughly.

Dice the tomato and onion into small pieces.

Chop fresh cilantro if using.

In a large bowl, combine all ingredients: black beans, corn, tomato, onion, lime juice, and cilantro.

Season with salt and pepper.

Gently stir until well mixed.
