  • 15 oz black beans, drained and rinsed

  • 2 cups whole kernel corn (frozen or canned; thawed if frozen)

  • 1 large tomato, diced

  • 1 small onion, diced

  • 2 tablespoons lime juice (freshly squeezed)

  • Fresh cilantro (optional, to taste)

  • Salt and pepper, to taste


Instructions

  • If using frozen corn, thaw it and drain completely.

  • Rinse and drain the black beans thoroughly.

  • Dice the tomato and onion into small pieces.

  • Chop fresh cilantro if using.

  • In a large bowl, combine all ingredients: black beans, corn, tomato, onion, lime juice, and cilantro.

  • Season with salt and pepper.

  • Gently stir until well mixed.

  • Taste and adjust seasoning.

  • Chill for 30 minutes or serve immediately.
