Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 small potatoes, diced
  • 1 zucchini, chopped
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 bell pepper, diced
  • 2 cups chopped kale or spinach
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Juice of ½ lemon

Instructions

  • Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5 minutes until softened. Stir in garlic and cook for another minute.
  • Add diced tomatoes, potatoes, bell pepper, broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in zucchini, corn, and beans. Cook for another 5 minutes until vegetables are tender.
  • Add chopped kale or spinach and stir until wilted.
  • Finish with a squeeze of lemon juice. Adjust seasoning if needed.
  • Serve warm and enjoy!

Notes

  • For extra flavor, use homemade vegetable broth.
  • Add red pepper flakes for a spicy kick.
  • Store in the refrigerator for up to 5 days or freeze for 3 months.
