Ingredients

- 2 tbsp olive oil
- 1 yellow onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 small potatoes, diced
- 1 zucchini, chopped
- 1 cup corn (fresh, frozen, or canned)
- 1 can (15 oz) white beans, drained and rinsed
- 1 bell pepper, diced
- 2 cups chopped kale or spinach
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Juice of ½ lemon
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5 minutes until softened. Stir in garlic and cook for another minute.
- Add diced tomatoes, potatoes, bell pepper, broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in zucchini, corn, and beans. Cook for another 5 minutes until vegetables are tender.
- Add chopped kale or spinach and stir until wilted.
- Finish with a squeeze of lemon juice. Adjust seasoning if needed.
- Serve warm and enjoy!

- For extra flavor, use homemade vegetable broth.
- Add red pepper flakes for a spicy kick.
