This Berry Croissant Bake is a sweet, buttery breakfast casserole filled with flaky croissants, fresh berries, and a rich custard. It’s easy to prepare, perfect for brunch, and can be made ahead for busy mornings.

- 4 large croissants (torn into pieces)
- 1 cup sliced strawberries
- ½ cup blueberries
- ½ cup raspberries
- 8 oz cream cheese (softened)
- ⅔ cup granulated sugar
- ¾ cup milk
- 2 large eggs
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Spread croissant pieces evenly in the dish and top with berries.
- Beat cream cheese until fluffy, then mix in sugar, milk, eggs, and vanilla until smooth.
- Pour mixture over croissants and berries, pressing lightly to soak.
- Refrigerate for at least 15 minutes (or overnight).
- Bake uncovered for 35-40 minutes until golden brown.
- Let cool for 10 minutes before serving. Optionally, dust with powdered sugar or drizzle with syrup.
Notes
