These homemade Beef & Cheese Chimichangas are crispy, cheesy, and loaded with flavorful ground beef. A Tex-Mex favorite, they can be fried, baked, or air-fried for a crunchy, golden-brown finish. Perfect for weeknight dinners or meal prep!

- 1 lb ground beef
- 2 cloves garlic, minced
- ½ cup onion, diced
- 1 tsp taco seasoning
- ½ cup salsa
- 1 cup shredded cheddar or Monterey Jack cheese
- 6 large flour tortillas
- Oil for frying (or spray for baking)
- Sour cream, guacamole, and salsa for serving
Instructions
- Cook the Beef: In a skillet over medium heat, cook ground beef, onion, and garlic until browned. Drain excess fat. Stir in taco seasoning and salsa. Simmer for 2-3 minutes.
- Assemble Chimichangas: Place the beef mixture in the center of each tortilla, sprinkle with cheese, fold in the sides, and roll tightly.
- Cook:
- Frying: Heat oil in a pan and fry for 2-3 minutes per side until golden.
- Baking: Brush with oil and bake at 400°F (200°C) for 20 minutes, flipping halfway.
- Serve: Top with sour cream, guacamole, and salsa. Enjoy!
Notes
- For a healthier option, air-fry at 375°F (190°C) for 10-12 minutes.
- Add jalapeños or chipotle for extra heat.
