Ingredients

  • 2 cups cherry tomatoes
  • 1 block (8 oz) feta cheese
  • 4 cloves garlic, minced
  • ¼ cup olive oil
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • 10 oz pasta (penne, rotini, or preferred choice)
  • ½ cup reserved pasta water
  • Fresh basil for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • Place cherry tomatoes in a baking dish, drizzle with olive oil, and season with salt, pepper, Italian seasoning, and red pepper flakes. Toss to coat.
  • Place the block of feta in the center of the dish, drizzle with more olive oil.
  • Bake for 30-35 minutes until tomatoes burst and feta softens.
  • Meanwhile, cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.
  • Remove the baking dish from the oven and mash the feta and tomatoes to create a creamy sauce.
  • Add the cooked pasta and mix well. If needed, add reserved pasta water for a silkier texture.
  • Garnish with fresh basil and serve immediately.

Notes

  • Use whole block feta instead of crumbled for a better texture.
