Wet Ingredients:

  • 1 cup cottage cheese (full-fat or low-fat)

  • 2 large eggs

  • 1/4 cup milk (any type, including plant-based)

  • 1/4 cup maple syrup or honey (adjust for sweetness)

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/4 tsp salt

Dry Ingredients:

  • 1/2 cup rolled oats

  • 1/2 tsp baking powder

Fruits & Toppings:

  • 1 cup fresh or frozen blueberries

  • Optional Toppings: Additional fresh blueberries, powdered sugar, or maple syrup/honey drizzle


Instructions

  • Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish or pie dish.

  • In a medium bowl, whisk together cottage cheese, eggs, milk, maple syrup (or honey), vanilla extract, cinnamon, and salt until smooth.

  • Stir in rolled oats and baking powder until well mixed.

  • Fold in blueberries, reserving some for topping if desired.

  • Pour the mixture into the greased baking dish and top with reserved blueberries.

  • Bake for 30–35 minutes, until set and golden.

  • Allow to cool for 5–10 minutes before slicing.

  • Serve warm with toppings of choice.

Notes

  • Use rolled oats for the best texture.

  • If using frozen blueberries, there’s no need to thaw them before adding.

  • For extra flavor, try adding a teaspoon of lemon zest to the batter.
