For the Muffins:

  • 3 cups all-purpose flour
  • 3 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 cups peeled & chopped apples (about 2 medium apples)
  • 1½ cups dairy-free milk
  • 2 tbsp vinegar
  • 1 tsp vanilla extract
  • 5 tbsp melted dairy-free butter
  • ⅓ cup vegetable oil
  • 1 cup granulated sugar

For the Crumb Topping:

  • 1 cup all-purpose flour
  • 1½ tsp ground cinnamon
  • ¼ tsp salt
  • ⅓ cup brown sugar
  • 6 tbsp melted dairy-free butter

Instructions

  • Make the Crumb Topping: In a small bowl, mix flour, cinnamon, salt, and brown sugar. Stir in melted butter until crumbly. Set aside.
  • Mix Dry Ingredients: In a large bowl, whisk flour, baking powder, baking soda, cinnamon, and salt. Toss in the chopped apples to coat them in flour.
  • Prepare Wet Ingredients: In another bowl, whisk milk, vinegar, vanilla extract, melted butter, oil, and sugar. Let sit for 5 minutes.
  • Combine Wet and Dry Mixtures: Gently fold the wet ingredients into the dry mixture. Mix until just combined; do not overmix.
  • Fill the Muffin Pan: Preheat oven to 425°F (220°C). Line a 12-cup muffin tin with liners and fill each to the top with batter. Sprinkle with the crumb topping.
  • Bake the Muffins: Bake for 5 minutes at 425°F, then reduce temperature to 350°F (175°C) and bake for another 20-25 minutes until golden brown.
  • Cool and Serve: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack. Enjoy warm or store for later.

  • Use Granny Smith apples for a tart flavor or Honeycrisp for extra sweetness.
  • Letting the batter sit for a few minutes before baking helps create a fluffier texture.
