Ingredients

  • 45 lbs bone-in chicken thighs, skin removed

  • ⅓ cup olive oil

  • ½ cup orange juice

  • ¼ cup lime juice

  • 6 garlic cloves, minced

  • 2 oz achiote paste

  • 1 tbsp ground cumin

  • 1 tbsp ground coriander

  • 1 tbsp kosher salt

  • 2 tsp smoked paprika

  • 2 tsp dried oregano

  • 1 tsp ground black pepper

  • 1 tsp chipotle chile pepper

  • 1 small yellow onion, chopped


Instructions

  • Whisk marinade ingredients until smooth.

  • Coat chicken in marinade, cover, and refrigerate for 4 to 24 hours.

  • Grill at 425–450°F for 5–7 minutes per side, or

  • Bake at 400°F for 25–35 minutes until internal temp reaches 175°F.

  • Let rest 5 minutes before slicing and serving.

Notes

  • For deeper flavor, marinate overnight.

  • You can freeze marinated raw chicken for up to 3 months.
