Ingredients

4–5 lbs bone-in chicken thighs, skin removed

⅓ cup olive oil

½ cup orange juice

¼ cup lime juice

6 garlic cloves, minced

2 oz achiote paste

1 tbsp ground cumin

1 tbsp ground coriander

1 tbsp kosher salt

2 tsp smoked paprika

2 tsp dried oregano

1 tsp ground black pepper

1 tsp chipotle chile pepper

1 small yellow onion, chopped
Instructions

Whisk marinade ingredients until smooth.

Coat chicken in marinade, cover, and refrigerate for 4 to 24 hours.
